I have a beef ribs recipe that calls for stout beer. I only have cheap, regular beer. Will it ruin the ribs to use this? It's mixed with beef broth, garlic, onion and butter and simmered in a dutch oven. [ Reply | Watch | Flag ]

Short ribs? It needs more depth of flavor than regular beer IME. I'd just do red wine to be honest, that is how I do short ribs (broth, garlic, onion, butter and red wine) [ Reply | More ]

sounds delicious. I might add a pinch of a "heavy" spice like cinnamon or clove, or a little bit of Coke if you have it, to get a little closer to the taste of stout. [ Reply | More ]

I would not use a pilsner with ribs. Probably not a lager either. And you don’t want something hoppy like an ale. Porter or stout the best. [ Reply | More ]

I'm into craft beer, and a good stout has flavors of coffee, chocolate, others too, that impart flavor to your food. A typical AAL ("adjunct American lager") simply doesn't have these tastes. You might use the AAL to steam brats or mussels, but try to get the stout for your beef ribs - easy enough to find in any grocery store. [ Reply | More ]
