need family dinner ideas for a WOH parents. something that is quick and easy to eat for young kids yet is somewhat an adult food. normally have about 15-30 min to prepare. too tired b/c its too late by the time the kids are in bed to prepare for the next day. tia [ Reply | Watch | Flag ]

i worked very hard to think of things to eat that either take very little prep time or taste well when prepared in advance. some of my favorite ideas are mock lasagna: use any noodle, cook in the night before. mix it with ricotta cheese, whatever seasoning you like (oregano, basil, etc), a jar of marinara sauce, and whatever frozen veg you like (i use spinach). bake at 350 until it's heated through. A similar idea is baked ziti: if you precook the noodles it is very quick. Fish fillets cook really quickly, as do chicken cutlets. I also love precooking soups: they always taste better a few days after cooking and they make meals very hearty. with some soups, i serve it with bread and it's a whole meal. [ Reply | More ]

I got a mini-meatloaf and roasted potatoes recipe from Martha Stewart FOOD. I make with turkey insead of beef. Very quick and easy, everyone likes, feels like a real meal. In the colder months I'll make a lasagna or bolognese on Sunday and I'll freeze some and use the rest for a couple of meals during the week. [ Reply | More ]
