Cooking help. Whenever I cook a whole roast chicken, I just put it in the roasting pan solo. I'm thinking of roasting some veggies with it. Do I just put them in the bottom of the pan? Do they end up greasy and mush from the juices? I know, I simple question but I've never done this before. TIA. [ Reply | Watch | Flag ]

put them in anyway to flavor the chicken. 1. add herbs to butter and put under skin of chicken. 2. take 1 T melted butter and put on skin. 3. put in heated pan and add onions, carrots, celery and 1 c. wine. 4.put chicken wing side up and bake at 375 for 20 minutes, 5. turn pover to other wing and cook 20 minutes and baste. 6. turn so breast is facing up and cook another 30-45 minutes or meat temp says 160. 7. take out and let sit for 10 minutes.
