First of all don't store your eggs in a cold fridge until you are ready to cook. (A little secret: eggs don't need to be refrigerated. I worked in a grocery store as a kid. The eggs never saw anything below room temp before they hit the cooler for people to buy them.) If the yolk is warmer before cooking you will have better results. That is where I would start my experiment. This sounds like a question for America's test kitchen/Cooks Illustrated. [ Reply | More ]

Breakfast is the easiest meal to master. Decent pancakes are like five dry ingredients you can mix in batches a head of time and three/four* wet ingredients you add when you want them. (For really great pancakes separate your eggs and add the whites to the milk(butter milk) and the yolks to the melted butter. Hence the three/four.) Omelets are easy and quick and a great way to get rid of leftovers. Get a bottle of oyster sauce and leave it in the fridge. This one ingredient will move your omelets from good to GREAT!
