Who's right? Bought a new wedge of Parmesan cheese; used it last night; went to wrap it tightly in plastic wrap before putting in the fridge. DH said it's fine in a tupperware container (no plastic wrap). I thought the idea was to keep the cheese from being exposed to air. [ Reply | Watch | Flag ]

I always heard that cheese should be allowed to breath a little. Ideal for parmesan is to wrap first in in parchment and then in a ziplock bag. Airtight container would work too. [ Reply | More ]

np. I think this is correct. Enough air not to let moisture turn into mold, but not so much air that the cheese hardens. [ Reply | More ]

I use waxed paper, I avoid using plastic directly on cheese [ Reply | More ]

Agree. I find that the cheese will take on odor and taste of the plastic wrap and even the Tupperware (think dishwasher soap scent). Maybe I’m just super sensitive. [ Reply | More ]

it dries out in tupperware, imo. doesnt matter tho. do it his way and when it dries out too much, he'll see. [ Reply | More ]

OP here. That's the thing -- when it dries out, it has zero flavor. [ Reply | More ]

men hate being told they are wrong. let him do it his way, in a couple of weeks, let him reach for the dried out cheese and realize he was wrong. Then, he'll change. its annoying, but do it. [ Reply | More ]
