Arghh. Need baking help. I'm make a pie from one of the Magnolia Bakery cookbooks. I've never had a problem w/ their recipes before (and I'm an experienced baker). I followed it precisely but now I'm trying to roll out the pie crust and the dough simply won't hold together. Any ideas? [ Reply | Watch | Flag ]

Rolling pie crust is a serious art form that takes endless practice, are you experienced? [ Reply | More ]

Not as experienced w/ pie crust as other baking, but I mean this is just crumbling apart. Maybe I should sprinkle a little water on it? [ Reply | More ]

and I usually use a crust recipe from my friend's gay dad, and it always worked. But this one went with the pie itself and I wanted to do the whole thing. [ Reply | More ]

why in the world is it relevant that your friend's dad is gay? [ Reply | More ]

sounds like you need water, but use ice water (particularly in this heat), also, make sure your surface is floured, but not too much, when you roll do not apply too much pressure and lift before you get to the edge (if that makes and sense) and also good to use one of those rolling sheets that you can rotate as you roll to keep pressure even. I am a great baker, but rolling pie crust is my nemesis. It is actually a running family joke - my sister is blessed with her rolling skills, which she inherrited from my mom and I did not. the comment below about putting in fridge is good as well and try to handle it as little as possible. Pie crusts are like ficus trees - very tempermental [ Reply | More ]

Okay, here's my solution. I just called DH and asked him to pick up a pre-made crust at the store (I already have the filling done). I did have it chilled and then it just kept falling apart--so I'm standing there going "you can't handle it too much" while it keeps falling in pieces. Damn it. I can bake any cake or cookie you want, but pie crust brings me to my frickin' knees. [ Reply | More ]

I know, I was bent on making a pie for a family occassion recently. Literally made dough 3xs. I was up until 2AM. Finally patched the thing together (when it bakes it can be a bit forgiving). Called my sister on the west coast 10x during this ordeal. The pie was not pretty, but it was tasty. Have not attempted since. [ Reply | More ]

That happened to me the first time I made caramels. The next time I started to make them DH looked at me like "you've lost your freaking mind." But they were much easier the next time around and now I'm confident with them. Can't say the same for pie crust though, obviously. [ Reply | More ]
