i need a quick vegetarian pasta dish. sick of my standbys, which include pasta with roasted tomatoes, mozzarella, corn and basil; pasta with a sauce made of ricotta and pasta water and peas; and the same except with goat cheese, zuchinni and lemon. any ideas? thanks. [ Reply | Watch | Flag ]

pesto! i also do 1. tomato sauce flavored with rosemary, pureed with chick peas, and more whole chickpeas added; tomato sauce plus canned cammelini or kidney beans (or both); 3.raw tomato sauce, made with tomatoes, olive oil, balsamic, garlic, and fresh herbs. also try roasted peppers, or zucchini sliced very thin and sautedd in oil with garlic. thanks. i forgot to mention my other one - sauteed onions and garlic and frozen spinach with lots of olive oil and a little bit (tablespoon or so) of jarred tomato sauce. [ Reply | More ]

you can also do fresh herbs cooked in olive oil, but not a lot of kids wil eat it. oh, adn veggie lasagna or baked ziti with vegetables ( i like to use peppers or broccoli). adn i often toss in veggies with pesto or even blend some peas into it. [ Reply | More ]

primavera: peas, onions, asparagus, carrots, garlic all sauteed in a mixture of butter and olive oil with salt and pepper. Mix in the cooked pasta. Remove from the heat and sprinkle with parmesan or romano. [ Reply | More ]
