whenever i cook beef stew (even the parts that are know to be tender), it comes out either chewy or dry. i can figure out how to cook beef so its buttery tender. what am i doing wrong? any tips. i have eaten very tender beef even on an airplane, and airplane food sucks. so i know its possible. should i use meat tenderizers, but are those chemicals.? My first thought is that you are cooking the stew at too high a heat. (Other issues: you are using crappy cuts, you are not cutting it properly, not cooking long enough, etc?) Try Alton Brown. He teaches as well as instructs. [ Reply | More ]
