have them in their pajamas when you get on the plane, or put them on right when you get on. read books or do whatever your normal routine for going to bed is (to the extent you can) and then just try to get them to sleep a normla night. and agreed, bring lots of snacks but more importantly, bribes like lollipops, gum, whatever they always always shut up for. good luck.
