really? i had that book in college, seems too stir-fry-ish now. i was thinking pasta or risotto, but any other ideas of something substantial and especially good. these people are foodies, and vegetarian, which is a tough combo. [ Reply | More ]

hhmmm....I used to be vegetarian. Veggie lasagne is always good. Do they eat dairy? Just layer tomato sauce, ricotta, pasta and I usually throw in some spinach and zuchini. If they are vegan it's out of my league! I never could figure out how to do that. Hold on for a minute and I'll check my one remaining veggie cookbook [ Reply | More ]

I'm a veggie and I hate when people make a big deal over it, just do pasta and you'll be fine. If you really want, make the ribs and go buy the veggie equivalent. They're made by morning star farms and are called ribblets. Dh and I love them. [ Reply | More ]

^^^ if you go this route though, you may want to pick up 2 boxes, they're a bit on the small side. Cook them in the oven uncovered and the bbq sauce gets all nice and carmalized. [ Reply | More ]

are you still there? I found a great recipe for roasted corn and zuchini quesadillas. I will post it if you want. It's a great cook book from a veggie restaurant in Athens Ga. I use it even though I eat meat now [ Reply | More ]

no prob. 2 zukes, 2 cups frozen corn, 1 tsp paprika, olive oil, leaves of 12 cilantro stems minced, 1/2 tsp salt, 1/4 black pepper, butter, 4 flour tortillas, 4 cups shredded white cheese. Oven 400 degrees Combine zukes and corn in a bowl. Toss with paprika and olive oil to coat. Spread on baking sheet. Roast for 20 minutes till slightly browned. Stir occasionally. Remove from oven and toss with cilantro, salt and papper. Butter skillet and toast tortillas, cover with cheese and layer veggies. When it begins to melt fold tortilla over and brown both sides. That sounds really good and summery to me. You could make some guac too. Yum! [ Reply | More ]

By the way, if you are grilling the ribs, the ribblets work on the grill really well too. Just be careful because they cook faster than meat. [ Reply | More ]
