I do a lot of cooking and watch a lot of FoodTV shows. In actuality, MOST of the alcohol is burned off in the cooking, but a residual amount always remains, however trivial. The higher the cooking temp & longer you "boil" the liquid, the more likely the alcohol will "fully" burn off. I heard a statistic that about 5 - 10% remains no matter how much you cook the darned thing. (PS: I loved your question because I am pregnant and just yesterday, I ate some penne ala vodka. I was a tad worried myself and then I remembered the statistics from the food show I watched. Food for thought? :-) [ Reply | More
