whenever i cook a steak (that is not filet mignon) it is as tough as an old shoe. do i need to tenderize with a mallet or what am i doing wrong? tia [ Reply | Watch | Flag ]

I went to culinary school and now work on cookbooks. hot pan, 1-2T of oil, 4 minutes a side and then let it REST for 5 minutes. The resting tendorizes the meay because the juices re-distrubute [ Reply | More ]
