You cannot be cautious with CFS... make sure you season the meat with s&p. i s&P the flour, dredge the meat, then dip it in milk and dredge again in flour and then let the meat dry. in a black iron skillet (if you want to be authentic) heat bacon grease -OR- butter & oil and "fry" the meat till crispy on each side. Then you must make the white gravy. At this time, turn on some bluegrass music or some old country (old guys with hats) and pour out most of the grease from the pan. add a bit more butter and some big TBS of flour. cook that a bit to make a roux of sorts and then whick in a couple cups of milk, some cream, and some salt and lots of pepper... cook till thick and artery clogging !
